Birthday Brunch- the Savory

savorybrunch1Now that you’ve seen the highlights of my roommate’s birthday brunch, let’s take a detailed look at the menu, starting with the savory bites.  When planning each item, we tried to keep them simple, yet delicious and still exciting.  In addition, we opted for items that could be finished in one to two bites or were easy to eat on the go, since we were using out dinning room table for the food display.  We didn’t want our guests to feel uncomfortable while eating on our coach or standing up and mingling.

{chicken & waffle bites}

ingredients:
Frozen Eggo Mini Waffles
Frozen Tyson Popcorn Chicken
Mini Wooden Fork Skewers

directions:
Preheat oven to 400 degrees. Place popcorn chicken in a single layer and bake for 10 minutes.

Halfway through cooking the chicken, place Eggo waffles in a single layer on a baking sheet, and cook for 5 minutes until golden brown.

While still warm, carefully assemble chicken & waffle bite, using a wooden skewer to secure the two together. Drizzle with Maple Syrup or provide a side for guests to dip individually.

{mini egg cups- bacon & cheese and spinach & cheese}

ingredients:
12 slices bacon
16 eggs
1 cup shredded cheddar cheese
1/2 cup spinach, chopped
pinch of salt
fresh cracked pepper

directions:
Preheat oven to 350 degrees.

For Bacon & Cheese cups, whip 8 eggs, salt, pepper and 1/2 cup cheese with a fork. Spray non stick spray in 24 mini muffin tins. Wrap half a piece of bacon inside the sides of each mini muffin cup. Fill each bacon lined muffin cup 3/4 of the way with the egg mixture.

For Spinach & Cheese cups, whip 8 eggs, chopped spinach, salt, pepper and 1/2 cup cheese with a fork. Spray non stick spray in 24 mini muffin tins. Fill each muffin cup 3/4 of the way with the egg mixture.

Bake for 20-25 minutes, until the egg cups are golden brown. Use a knife to scoop them out of the tins. Serve immediately.

{bacon skewers}

ingredients:
1 package bacon
thin wooden skewers

directions:
Tread one strip of bacon onto each skewer and place on a foil lined baking sheet. Once all strips have been skewered, place the pan in the cold oven. Heat oven to 400 degrees and cook for 20-25 minutes.

Once desired level of crispiness has been achieved, remove from oven and pat excess grease with a paper towel. Serve immediately.
